The hubs is baking for my birthday!

Our kids say I always bake the cakes so I should have someone make me a cake, so they came up with a plan to make my birthday cake..awww. Ohh no my poor kitchen!


The ideas ranged from a 3 tier construction to a square cake with handmade flowers flowing off the corner with wonder-woman and spatulas and cake tools and hearts.. aww how cool are they!

Luke, my husband said (who is not a baker in the slightest, aka cake noob) "we can make you a cake" "though can you help with the recipe. something easy"


Bless him, making a cake must give him the same feelings that I feel when someone asks me to replace a car wiper blade lol! it's amusing, to say the least. And yes I did put it on backwards and nearly upside down if that's even possible!


Anyway, my usual recipe is pretty easy. Generally just a Victoria sponge cake recipe. But he wants it easier than that lol. So I perused the BBC's good food and found this little gem.

I reckon it's as easy as it gets. And it's a similar process to my favorite muffins so yeah he can manage that bless him. Though if you're a praying person, pray for him lol!

As he is attempting it, a noob in the kitchen... with 5 kids to help!

Poor bloke!. though he is a brave man.

Anyway, I thought I'd share the recipe and give kudos to the creator of it. I will post pictures of what they made because I am so proud of them and what they achieve, also I know deep in my bones how thoroughly blessed I am. to be part of the crazy, barmy, massive, melded, and mushed up family.

The Recipe. (a BBC good food member recipe the ledge that is, misskay)


Ingredients

  • 150ml sunflower oil, plus extra for the tin

  • 175g self-raising flour

  • 2 tbsp cocoa powder

  • 1 tsp bicarbonate of soda

  • 150g caster sugar

  • 2 tbsp golden syrup

  • 2 large eggs, lightly beaten

  • 150ml semi-skimmed milk


For the icing

  • 100g unsalted butter

  • 225g icing sugar

  • 40g cocoa powder

  • 2½ tbsp milk (a little more if needed)

Method

  • STEP 1Heat the oven to 180C/160C fan/gas 4. Oil and line the base of two 18cm sandwich tins. Sieve the flour, cocoa powder, and bicarbonate of soda into a bowl. Add the caster sugar and mix well.

  • STEP 2Make a well in the center and add the golden syrup, eggs, sunflower oil, and milk. Beat well with an electric whisk until smooth.

  • STEP 3Pour the mixture into the two tins and bake for 25-30 mins until risen and firm to the touch. Remove from oven, leave to cool for 10 mins before turning out onto a cooling rack.

  • STEP 4To make the icing, beat the unsalted butter in a bowl until soft. Gradually sieve and beat in the icing sugar and cocoa powder, then add enough of the milk to make the icing fluffy and spreadable.

  • STEP 5Sandwich the two cakes together with the butter icing and cover the sides and the top of the cake with more icing.

P.s it was delicious!!!! so good in fact he made another one! but with orange inside and orange on top.
